Lentil Balls
Ingredients:
1 tin of canned lentils
1/2 teaspoon of curry powder
1/2 teaspoon of cumin powder
1 1/2 cups flour
1 1/2 teaspoons of baking powder
Approx. 1/3 cup Water
Drain the lentils and put in a bowl. Mash with a fork or your hand.
Mix in the curry and cumin, then add the flour and baking powder. Gradually add the water until the mixture holds together (but don't let it get too wet).
Heat oil in a frying pan on a low to medium heat, then add the balls. Once the balls are mostly cooked (open one up to see if cooked through, they shouldn't look too doughy, can also taste test) increase heat so the balls brown. Once balls are browned add pasta sauce and cook for a further 3 – 5 minutes.
Serve with spaghetti or fettuccine and vegetables.
